When selecting mushrooms choose caps that are firm and plump with a smooth, yet dry appearance.  A closed veil under the cap will provide a more delicate flavour, whilst an open veil with exposed gills will provide a richer flavour. Store them in their original packaging or in a porous paper bag for prolonged shelf life, or refrigerate for up to a week. Fresh mushrooms should never be frozen, however they will keep in the freezer for up to a month if they've been cooked.
